I’m very happy to be working with Wild Blueberries, who sponsored today’s post.
Are you already a fan of my Peanut Butter Chocolate Oatmeal Cups? They are the most popular recipe on this blog–and I’ve heard from more than one of you that you make a batch of them every week! I totally get it: They’re satisfying, not too sweet, and perfect for breakfast, snacks, and lunch boxes.
Here’s a new twist on the beloved oatmeal cup: Wild Blueberry & White Chocolate.
I know white chocolate is polarizing. I know it’s not even technically chocolate. White chocolate morsels ended up in this recipe on a total whim, after I spotted a bag in my baking cabinet, leftover from a holiday recipe I had made. I decided to toss some in and see what happened.
Good things happened! The white morsels took these from good to great. And my kids gobbled them up. A 12-year-old guest at our house ate two in a row and was angling for a third.
If you haven’t tried Wild Blueberries yet, you should. They’re in the freezer section, right next to the other frozen fruit. Their smaller size is perfect for these oatmeal cups because you get more berry color and flavor in every bite. (They also have twice the fiber and antioxidants that regular blueberries do.)
These oatmeal cups are also gluten-free in case that’s important to you.
