Oats & Yogurt Bread Machine Rolls
- 3/4 cup oats
- 1/2 cup very hot water
- 1 cup plain yogurt
- 1 1/2 tablespoons butter
- 2 tablespoons honey
- 1 1/2 teaspoons salt
- 3/4 teaspoon baking soda
- 6 tablespoons oat bran I use Bob's Red Mill brand, which is in the "natural foods" section or the hot cereal section of the grocery store
- 1 1/2 cups all purpose flour
- 1 cup whole wheat flour
- 2 1/4 teaspoons yeast
- 1 egg yolk
- 1 tablespoon water
Put the oats in your bread machine's bread pan. Add the hot water, stir, and let sit for 15 minutes.
Put remaining ingredients in bread machine pan in the order they are listed (using a spoon, make a little well in the flour for the yeast).
Set machine on the dough setting. When done, restart dough cycle and allow the machine to "punch" down your dough and knead it for about 15 seconds.
Turn machine off and take out the dough.
Butter or spray a baking sheet and sprinkle with cornmeal.
Cut the dough into portions, shape into rolls, and place them on the baking sheet. Cut a small criss-cross on top of each roll with a knife.
Beat the egg yolk and water together and brush the tops of the rolls with the mixture. Crumble some oats in your hand and sprinkle on top of each roll.
Cover with a clean dish towel and let rise in a warm place for about an hour or until double in size.
Bake at 350 degrees for 15-20 minutes until golden brown.
