Oats & Yogurt Bread Machine Rolls

Ingredients

  • 3/4 cup oats
  • 1/2 cup very hot water
  • 1 cup plain yogurt
  • 1 1/2 tablespoons butter
  • 2 tablespoons honey
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon baking soda
  • 6 tablespoons oat bran I use Bob's Red Mill brand, which is in the "natural foods" section or the hot cereal section of the grocery store
  • 1 1/2 cups all purpose flour
  • 1 cup whole wheat flour
  • 2 1/4 teaspoons yeast
  • 1 egg yolk
  • 1 tablespoon water

Instructions

  • Put the oats in your bread machine's bread pan. Add the hot water, stir, and let sit for 15 minutes.
  • Put remaining ingredients in bread machine pan in the order they are listed (using a spoon, make a little well in the flour for the yeast).
  • Set machine on the dough setting. When done, restart dough cycle and allow the machine to "punch" down your dough and knead it for about 15 seconds.
  • Turn machine off and take out the dough.
  • Butter or spray a baking sheet and sprinkle with cornmeal.
  • Cut the dough into portions, shape into rolls, and place them on the baking sheet. Cut a small criss-cross on top of each roll with a knife.
  • Beat the egg yolk and water together and brush the tops of the rolls with the mixture. Crumble some oats in your hand and sprinkle on top of each roll.
  • Cover with a clean dish towel and let rise in a warm place for about an hour or until double in size.
  • Bake at 350 degrees for 15-20 minutes until golden brown.
