Pantry Challenge: Week #1 Shopping Trip & Meal Plan

It’s the first day of the Autumn Pantry Challenge! Today, I made trips to Aldi and my neighborhood supermarket and spent only $32 on groceries for the week (my weekly budget is $50 or less).

Week One Meal Plan

Sunday: Beef Barley Soup, Homemade Oatmeal Yogurt Rolls, Salads

Monday: Leftovers

Tuesday: Cod from freezer, Whole Wheat Egg Noodles, Roasted Broccoli

Wednesday: Halloween! Homemade Mac-n-Cheese or PBJs before trick-or-treating

Thursday: Baked Chicken, Butternut Squash Au Gratin, Salads

Friday: Lentil & Rice Casserole, Sauteed Carrots w/ Butter & Brown Sugar

Saturday: Homemade Pizza (plain cheese for kids, farmer’s market sausage for grown-ups), Salads

This week’s cliffhangers:

  • Will I have to spend the remaining $18 of my weekly budget?
  • Will Hurricane Sandy wreak havoc on our lives, wipe out my big freezer stash of food, and render the Pantry Challenge null and void?

    YEAH! I did it my grocery bill came to $34.08. WOO HOO! My menu is made out for the next 5 weeks. Thank you so much for having this challenge.

      Bobbi Jo–nicely done! And wow–a five-week meal plan. That’s really impressive. I did a very rough three-week meal plan (of just dinners) and it felt really nice to be that organized. Hurricane Sandy may wreck the whole thing for me but at least I know it’s possible!

    Thanks for posting this! I can’t tell you how much help I need planning weekly meals…it is like I have a phobia or something. haha! And, to save money to boot…

      Kristin–meal planning is definitely challenging. My biggest obstacle is making meals from what we have on hand, not what I’m craving, what sounds good, or what new recipe I came across that day. So that’s what this challenge forces me to do. Good luck with your own pantry challenge!
